Are you looking for a new guilty pleasure? We’ve got one for you and it comes in the form of crunchy Greek graviera cheese puffs that are somewhere between a cracker and a rusk, light as air, and, well, very cheesy and tangy. They’re handmade in Crete by Votzakis, a traditional producer of bread rusks (a.k.a. paximadia), which are a Cretan specialty. This particular recipe is an addictive combination of wheat flour, Cretan graviera cheese, olive oil and tomato. The result is these button-shaped, blond puffs that burst into flavor with each bite. Pop one and you’ll pop them all! Serve them as a snack, put them out for company and cocktails, sprinkle them on salads or into soups as you would a crouton. Every which way, they’re delicious!
