Who doesn’t love grilled cheese? That’s exactly what this yummy creation is, minus the bread! Artisan food creator Avra Panousopoulou, founder of Yiam, grills wedges of one of Greece’s most beloved cheese, manouri, and preserves it as our grandparents did in extra virgin Greek olive oil. Manouri is one of the great table cheeses of Greece, a pressed whey cheese similar to ricotta salata, with a mild, milky, rich taste and creamy, smooth texture. It is one of the most popular cheeses to pan-sear or grill, and Yiam has recreated that in a jar. Serve these wedges as they are, on a small plate, olive oil included, or over a tomato salad. They’re great over pasta, on bread, in a sandwich, and as a garnish for hot soups, too.
