Nutty. Milky. Smooth. Sweet. Irresistible. Those are the words that come to mind when tasting a spoonful of our favorite Aegina pistachio producer’s sweet pistachio spread. Made with the same pure Aegina PDO pistachios as our unsweetened pistachio butter, here the addition of sugar, extra virgin Greek olive oil, and milk brings this unusual product to a whole other level of irresistibility!
You can eat it as is, literally out of the jar (remember, it’s sweet, so unlike peanut butter, doesn’t need jam to hold its own), or use it in myriad inventive ways. Sometimes I swirl it into vanilla ice cream and refreeze the mix, baffling guests with a delectable, if somewhat hard to pinpoint flavor combination. The taste of the pistachios is very prominent and delicious, but the underlying milkiness and the herbaceous undertones of olive oil combine to make this spread really unique.
Use it as a sweet treat, inside crepes, over French toast or pancakes, swirled into ice cream, in smoothies with Greek yogurt, combine any which way with dark chocolate, or savor an antithesis and serve it with something salty like prosciutto all spread and wrapped together on crunchy crostini. It’s also great in mousses.
