Nikos Bouzinelos, the passionate founder of Wisdom of Nature, produces this vinegar from the wine he makes with his organically farmed Agiorgitiko grapes, a native varietal from the Nemea region of Corinthia. It has fruity aromas and a distinct ruby red color.
Combined with Greek extra virgin olive oil, it makes a wonderful and simple vinaigrette. It also adds acidity and brightness when drizzled on a variety of dishes, like beans, boiled greens (horta), or soups.
Wisdom of Nature is a small family farm in Corinthia, in the Peloponesse, encompassing 20 acres of native grape varietals. The organic operation is vertically integrated from grapevine to the bottle.
