Put your espresso maker away! The ritual of making a true Greek coffee, which is rich and textural and much milder in caffeine, will add a zen moment and great flavor to your daily routine. Start with this traditional, beautiful copper briki, the special tapered Greek coffee pot with the long handle, the better to hold over an open flame without burning your fingers. Copper is an excellent conductor of heat, so the coffee simmers beautifully. The tapered top ensures an easy pour.
To make it, per demitasse cup, mix a heaping teaspoon of Greek coffee and sugar to taste with one demitasse cup of water. Stir over a low flame. When the coffee dissolves, continue to heat it, and as soon as the coffee starts to swell, remove and pour into your cup. The whole process takes about five minutes.
