Piperoktima is a delicious combination of roasted sweet and hot Florina peppers in a delicious spread made with extra virgin olive oil, salt, spices, vinegar, and walnuts. A single jar of this appetizing spread is made with 3kg of fresh peppers and is cooked for 3 hours, resulting in a deliciously rich spread. 

Florinas peppers are famous throughout Greece. Ranging from sweet to hot, they have a unique and delicious flavor. The Naoumidis family cultivates the famous red Florina Peppers on their farm in Agios Panteleimon Florina, at an altitude of 2,000 feet. They hand process and store their delicious pepper products in a beautiful stone cellar which links traditional architecture with modern technology. Central to their philosophy against hybridization is an obsession over the purity of their seeds, which they ensure by maintaining a proprietary seedbed at the farm.

This sweet and spicy spread is delicious on its own as a dip with some Greek rusks or fresh bread, but it also makes a wonderful condiment! One of my favorite ways to serve it is over yogurt in a steaming baked potato. It also makes a quick and simple meal served as a sauce for pasta and trahanas or as a spicy side to scrambled eggs.

Very Tasty on Anything!!!

A little goes a long way because the flavor is very concentrated--in a good way. I have tried it as a dip, as a spread on burgers, and as a sauce on pasta. All were fantastic. Definitely getting more to have on hand.

A very good Greek food along the lines of Ayvar, but with more complexity.
