Green Olive Spread with Almonds and Thyme (7 oz)



By now, tapenade is almost a household word, but this lovely textured green olive paste produced by food artisan, Avra Panousopoulou, at her small company, Yiam, in Central Greece, is definitely a step above. Her recipe is a combination of tangy green olives and mildly flavored almonds, ground together into a deliciously grainy spread, enhanced with garlic, thyme and extra virgin olive oil.

This green olive spread is decidedly milder than most, with an underlying garlic umami and hints of sweetness thanks to the thyme, making it an easy match for many different partners: serve it as a dip, spread it on bread as a healthy snack, whisk it into a salad dressing for flavor and texture, spoon it over mild cheese, use it in marinades or as a paste over fish or chicken before baking.

Just right taste and texture!

Used as a dip for vegetables. Would recommend if you love olives.
