This single-variety early harvest olive oil is produced by the Kelidi family in Makri, Northern Greece, from the Makri olive variety. Harvested in mid-October when the olives are at peak polyphenol levels, this oil is characterized by its singular fruitiness and mid to high intensity, with noticeable undertones of fresh green olive, green banana, artichoke and freshly cut grass. The oil is extracted within 4 to 8 hours of harvest and cold pressed under optimal conditions. Complex in taste, yet delicate with moderate bitter and spicy tones, it is best consumed raw as a finishing touch to all your dishes.
